How much raclette cheese is needed per person?
If you reckon on 200 to 250 grams of cheese per person, you are well covered. This applies to a classic raclette, where potatoes and other side dishes are also served.
What side dishes do I need for raclette?
Apart from cheese, raclette is a typical side dish:
- Potatoes
- Pickles
- Silver onions
- pickled corn cobs
- Meat and sausage products
- Raclette seasoning
However, you can get really creative here and also integrate fruity notes with pineapple or pears.
What alternative raclette ideas are there?
You can give yourself plenty of variety with alternative raclette cheese alone. You can now find all kinds of variations: Raclette cheese with lavender, truffle, garlic, chili, saffron, etc.

Which and how many potatoes are needed per person?
Use small, waxy potatoes for the raclette. Here, too, you should reckon with 200 to 250 grams per person. You can cook the "Gschwellti" in hot water (depending on the size of the potatoes, approx. 25 to 50 minutes or simply until you can pierce them easily with a fork). You can shorten the cooking time considerably if you prepare them in a pressure cooker.
How much meat is needed per person?
As meat is exceptionally only the side dish for raclette, around 150 grams per person is sufficient. Of course, you can adjust this information depending on how many side dishes, potatoes or cheese you are serving. For example, if you prefer to serve more meat per person, you can buy only 200 grams of potatoes and cheese per person instead of 250 grams.
Can you freeze raclette cheese?
Raclette cheese is very suitable for freezing. You will get the most out of it if you wrap the cheese slices individually in cling film. After defrosting, they will lose a little of their quality, but the cheese is still perfect for gratinating dishes. Make a note of when you froze the cheese and consume it within the next 2 months.

Can I eat the rind of the raclette cheese?
To be on the safe side, don't eat the rind. It could be that bacteria such as listeria have colonized it. These can be dangerous for pregnant women or small children.
Cut off the rind while the cheese is cool. Once the cheese has melted, it will be difficult to cut it off.
Raclette oven defective: How can I still prepare the cheese?
If you don't have a raclette oven or if it has broken, you can preheat your oven to 220 degrees and then place the cheese slices on a baking tray lined with baking paper and bake for approx. 10 to 15 minutes.
Is raclette cheese lactose-free?
Yes, raclette cheese is a semi-hard cheese and therefore - just like hard cheese - naturally lactose-free. Difficult to cut off.
