Our L'ETIVAZ ALPAGE AOP is a hard alpine cheese from Frédéric Rosat, Alp Antheines. It is made by hand over an open fire using a traditional recipe from raw milk between May 10th and October 10th. These selected cheeses have a light caramel and alpine flower flavor, with notes of spicy broth and leek. Alpine herbs. This magnificent alpine cheese has a slightly spicy and nutty note, which varies slightly from alp to alp depending on the cows' feed.

The Jaunpass alpine cheese dairy is located at 1508 meters above sea level between the Gruyère region of Fribourg and the Bernese Oberland. During the summer months, this fine alpine cheddar is made from mountain milk from the nearby summering farms. In addition to the typical cheddar production process, a colorful bouquet of alpine herbs and grasses gives the milk its character and the cheese its incomparable taste.
