Ingredients

  • 1.5 kg apples 
  • 250 g dried figs
  • 250 g dried plums
  • 100 g dried apricots
  • 100 g dates
  • 150 g plum brandy 
  • 300g ground hazelnuts
  • 400 g sugar
  • 800 g white flour
  • 30 g baking powder 
  • 40 g ground Ceylon cinnamon
  • 20 g gingerbread spice
  • 20 g cocoa powder
  • 10 g sea salt

Preparation

Quarter the apples and remove the core. Then grate the apples. Halve the figs, plums, apricots and dates. Mix the grated apples, dried fruit and ground hazelnuts together and mix with the plum brandy. Leave the mixture to stand for 2 hours. Then add the flour, baking powder, cinnamon, sugar, gingerbread spice, cocoa powder and sea salt and mix well. Form about 10 loaves of the same size, place them on a baking tray lined with baking paper and bake in a preheated oven at 175° for approx. 50-55 minutes.
