Like many cheesemakers in the canton of Fribourg, Nicolas Schmoutz is a passionate Gruyère AOP and Vacherin Fribourgeois cheesemaker. Nicolas also enjoys creating other types of cheese. One of these creations is Le Pèlutse, a white mold soft cheese made from raw milk. Launched in April 2021, the product unfolds a taste in the mouth that takes the connoisseur on a journey through the Fribourg countryside.

The cheese with the soft, delicate consistency and the pure, slightly spicy taste. This is the result of good craftsmanship during cheese-making and rubbing with Pinot Noir during maturation in the cellar. It is this Pinot from the Vully region that gives the cheese its name.

It is refined in Langnau, in the heart of the Emmental, and in the mountain in Reichenbach in the Kandertal. There it develops its fruity, distinctly spicy flavor and fine salt crystals are formed.
