History

Chascharia Val Müstair was founded in the 1970s when the village cheese dairies of Val Müstair merged to form a valley cheese dairy. Since then, Graubünden mountain cheese and many other regional specialties have been produced there. In 2018, the cheese dairy was relocated from the village center of Müstair to the edge of the village and can now make cheese using modern equipment.

Today, only 100% of the milk that meets the strict Bio-Suisse guidelines is cheesed. In addition, all milk is hay milk, which means that silage is no longer used for feeding. Since its foundation, the cheese dairy has been organized as a cooperative. The members of the cooperative are the 12 dairy farmers who supply Chascharia Val Müstair. The aim of the cooperative is to generate a good return for the dairy farmers, not to maximize profits for the cheese dairy.

The strict guidelines, the alpine herbs that the cows eat, the fact that in summer all the milk comes from the Alps and in winter all the milk is obtained from the hay of the herb-rich mountain meadows, this makes their cheese really fine, healthy, original and cool.
